Crave: Onion Rings and a Milkshake
Usually, the hot summer days have me craving lots of fresh food – fruits, veggies, and other light and healthy things.
However, every now and then I get a hankering for something a little bit naughty.
This weekend it was onion rings.
I saw someone at a restaurant eating a big plate of onion rings, and I wanted them. Now.
Also, what could go better with onion rings than a chocolate milkshake?
Not much.
I decided to take matters into my own hands and find a couple of recipes to indulge my cravings, without any guilt:
Baked Onion Rings:
Ingredients:
1 large sweet onion, peeled
2 tbsp flour
2/3 cup lowfat buttermilk
½ cup cornmeal
1 cup Panko breadcrumbs (or regular if you prefer)
¾ tsp kosher salt
1 tsp garlic powder
2 tsp dried herbs (pick your favorite)
Preparation:
Preheat oven to 425 degrees, and line a large baking sheet with parchment paper or aluminum foil.
Slice onion in to 1/2 inch width rings. (Should make about 15-20 rings or so).
In a shallow dish, whisk together 2 tbsp of flour with the buttermilk for coating.
In another shallow dish, whisk together cornmeal, breadcrumbs, salt, garlic powder, and herbs.
Using a fork or tongs, dip an onion ring into the wet mixture and coat all sides. Then, transfer the ring into the coating mixture and toss until it is completely covered. Place the onion ring carefully onto the baking sheet and repeat for the rest.
Bake for about 18 minutes, flipping the rings over once after 10 minutes. If you would like them to be more golden brown, you can broil them for just a minute or two at the end.
Serve immediately.
Chocolate Banana Milkshake:
1 scoop chocolate protein powder
1 frozen banana, broken into chunks
1 cup skim milk
½ cup ice
Preparation:
Add everything into a blender and blend until smooth.
